Cashew Cream

Ingredients

  • 1 cup Cashews
  • ⅓ cup Almond milk
  • 2 ea Date
  • ¼ tsp Vanilla
  • ¼ tsp Kosher salt
  • ¼ tsp Lemon juice
  • 1 cup Fruit of your choice (try mango, banana, or berries!)

Instructions

  • 1)

    Chop up date slightly. (Alternatively, soak date in water for at least 10 minutes to soften).

  • 2)

    Add to blender along with milk, cashews, vanilla, salt, and lemon juice. Blend on high until smooth.

  • 3)

    (Optional: soak cashews first in water, from 1 hour up to overnight).
    Serve topped with some of your favorite fruit. Delicious!

Notes

~This cream is a perfect topping for any dessert!
~It can also be made into a savory cream by using fresh herbs and spices instead of dates and vanilla.
