This is exactly how I cook! I’ve made the potato/leek and sweet potato/vegetable soups. The few times I’ve tried to use a recipe, it has been so frustrating and time consuming. I end up tossing the recipe and do my own thing! I use a lot of herbs and spices too….no need to measure out everything. Just use your tastebuds to guide you!

Just a day after watching this video, I just happened to find two bundles of leeks (3 to a bundle) and nine medium russets (among other things) in a common area where neighbors leave items they have in excess or otherwise don’t need or want. Even though this calls for cauliflower, I decided to save myself a trip to the market in the sweltering heat and make it without. Even though my version wound up being just potatoes and leeks and stock, it was delicious! The most amazing thing to me is that I didn’t add seasoning of any kind and yet the soup was very flavorful. I do plan to make it, with cauliflower included, in the near future. BTW, I had enough to share with my two next-door neighbors (and still have a lot leftover), and they loved it!
