Dark Chocolate & Pecan Stuffed Medjool Dates

This could be the world’s easiest, quickest & most nourishing dessert! It provides a healthful, slow release energy fix, lots of good soluble and insoluble fiber, protein and heart healthy fats. Medjool dates have even been proven to help reduce cholesterol & improve bone health, and they are packed with essential minerals like copper, potassium, zinc, magnesium, calcium phosphorous, and iron, as well as B vitamins. Best of all it takes literally minutes to prepare – so enjoy this dessert as a healthy, sweet treat!

Dark Chocolate & Pecan Stuffed Medjool Dates

Ingredients – per serve

  • 1-2 Medjool Dates
  • 2-4 Pecans
  • 1/2 oz Dark Chocolate (optional)
  • 1/2 tsp Shredded Coconut (optional)

Method

  • 1)

    Chop the Medjool dates open lengthwise and remove the pit.

  • 2)

    Stuff with 1-2 pecans.

  • 3)

    In a saucepan or microwave, melt dark chocolate on low heat, drizzle all over the pecan stuffed date & roll in shredded coconut.

  • 4)

    Refrigerate for 5 mins or until chocolate is set.

Notes

You may substitute different nuts; The recipe can be multiplied depending on how many you wish to serve. You can make this in advance and it will keep for weeks in the fridge or months in the freezer. As usual with sweets: Watch your serving sizes and consider this a dessert or treat!
