Dark Chocolate & Pecan Stuffed Medjool Dates

This could be the world’s easiest, quickest & most nourishing dessert! It provides a healthful, slow release energy fix, lots of good soluble and insoluble fiber, protein and heart healthy fats. Medjool dates have even been proven to help reduce cholesterol & improve bone health, and they are packed with essential minerals like copper, potassium, zinc, magnesium, calcium phosphorous, and iron, as well as B vitamins. Best of all it takes literally minutes to prepare – so enjoy this dessert as a healthy, sweet treat!

Ingredients – per serve

  • 1-2 Medjool Dates
  • 2-4 Pecans
  • 1/2 oz Tbs Dark Chocolate (optional)
  • 1/2 Tsp Shredded Coconut (optional)

Method

  • 1)

    Chop the Medjool dates open lengthwise and remove the pit.

  • 2)

    Stuff with 1-2 pecans.

  • 3)

    In a saucepan or microwave, melt dark chocolate on low heat, drizzle all over the pecan stuffed date & roll in shredded coconut.

  • 4)

    Refrigerate for 5 mins or until chocolate is set.

Notes

You may substitute different nuts; The recipe can be multiplied depending on how many you wish to serve. You can make this in advance and it will keep for weeks in the fridge or months in the freezer. As usual with sweets: Watch your serving sizes and consider this a dessert or treat!

    This dessert is fantastic and so very easy to make. I used a Lindt Dark Chocolate bar, 85%. I made about 18 to take to family gathering. I ate one to try it out, wow, so rich, I don’t think I could eat more at one sitting. Thanks for such a healthy treat.

    Last year my nephew gave me a packet of dates, stuffed with almonds and covered in chocolate. It was the most defadent treat I’ve ever had. I thought thT to make them, id need to make a whe big batch. Nnice to know I can make just a few, and keep them in the fridge for whem i need that special “something”. Thank you so much.
